Ingredients

225g (8oz) unsalted butter

225g (8oz) soft brown sugar

250g (9oz) plain flour

1/2 teaspoon ground mixed spice

1/2 teaspoon ground cinnamon

pinch of salt

4 large eggs

50g (2oz) ground almonds

50g (2oz) chopped almonds

juice & finely grated zest of 1 lemon

finely grated zest of 1 orange

2 tablespoons of marmalade (orange)

1 tablespoon black treacle

4 tablespoons brandy

500g (1lb 2oz) currants

200g (7oz) sultanas

200g (7oz) raisins

75g (3oz) glace cherries

50g (2oz) mixed candied peel

brandy to finish

Preparation

cream sugar & butter add eggs add flour, spices and ground almonds add treacle, juice, zest, chopped almonds, marmalade & brandy add all fruit

   Cooking:



   20cm (8') round or square cake tin

   lined with greaseproof paper

   140C/275F/Gas Mark 1

   3 to 3.5 hours
