Ingredients
1/2 cup extra light bertolli Olive oil
1 cup slightly packed brown sugar
1 egg and 2 egg whites
1 tsp vanilla
1 1/2 cup flour
1 tsp baking soda
1 tsp cinnamon
3 cups old fashioned oats
1 cup dates chopped
1 cup pecans chopped
Preparation
- Preheat oven to 350 degrees
- Beat together sugar and oil, add egg and egg whites. Beat well.
- In seperate bowl combine flour baking soda and cinnamon. Add to sugar mixture. Stir in oats, dates and pecans. Mix well.
- Drop by rounded teaspoonfuls onto greased cookie sheets.
- Bake 10 to 12 minutes or until golden brown.
