Ingredients
4 lbs chorizo sausage (casing removed)
2 28 oz cans whole tomatoes
1 6 oz can tomato paste
2 15 oz cans black beans (rinsed, drained)
2 large onions, chopped
2 tbs olive oil
Preparation
In a large pot, saute onions and chorizo in oil, breaking it apart until sausage is cooked through and well crumbled.
Add tomatoes and tomato paste. Stir well. Bring to a boil and simmer about 1 hour. Half way through add the black beans.
No need for extra seasoning unless you like it hotter. If so add chopped jalapenos to taste.
