Ingredients

1/2 cup currants

7 oz. semisweet chocolate

3 tablespoon butter

6 tablespoon sugar

3 oz. blanched almonds, finely chopped

7 oz. petit beurre biscuits (sweet plain), crushed

3 tablespoons candied orange peel

2 egg yolks

2 tablespoons brandy

Preparation

Soak currants in brandy to plump Melt the chocolate in a double boiler with the butter, Add sugar, almonds, crushed biscuits and orange peel, mix well Remove from heat and stirr in egg yolks, Let cool Form mixture into salami shaped logs and wrap in parchment paper Refrigerate to cool Slice the salami for sevice (let the chocolate come back part way to room temp before slicing)
