Ingredients

1½ cup water

⅔ cup quinoa

½ cup milk

1½ cup white or cane sugar

1 tsp. vanilla

¾ cup butter, melted and cooled

4 large eggs

1 cup cocoa

1½ tsp baking powder

½ tsp. baking soda

½ tsp. salt

Preparation

In a medium saucepan, bring quinoa and water to a boil. Cover, and reduce to a simmer and cook for 1o minutes. Turn off the heat and leave the cover on the sauepan and leave on the stove for another 10 mintues Fluff with a fork and allow the quinoa to cool.

 Preheat oven to 350°F.

 Lightly grease two-8"round or square pans.

 Line the bottoms of the pans with parchment paper



 Comibine milk, sugar, eggs, and vanilla in a blender or food processor

 Add 2 cups of quinoa anblender ord butter and continue to blend until smooth.



 Combine sugar, cocoa, baking powder, baking soda, and salt in a medium bowl.

 Add the contents in the food proccesor or blender into the dry ingredients and blend well.



Divide the batter evenly between the two pans and bake on the center rack of the oven

 Bake for 40-45 minutes, or until a bamboo skewer inserted comes out clean.



 Bake completely in the pan and cool before serving.

 Frost if desired.
