Ingredients
40g Dutch-processed cocoa
.8 oz/22g cornstarch
2g salt
17 oz/482 ml milk divided
8oz/227g semisweet chocolate
17 oz heavy cream
7 oz/ 200 g granulated sugar
.14 oz/ 4 g vanilla extract
Preparation
In a large bowl, sift together cocoa, cornstarch and salt. Add 4oz (112 ml) milk to make a paste. Melt chocolate.
In a medium saucepan, combine heavy cream, remaining milk (13 oz), and sugar. Bring to a simmer, stirring constantly.
Reduce heat to low; whisk in cocoa paste and continuing to whisk, bring to a boil. Remove from heat
Pour mixture through a strainer into melted chocolate. Add vanilla and stir until smooth. Pour into serving dishes and refrigerate.
