Ingredients
Crust:
10 large honey graham crackers
2 Tbsp Cocoa powder
5 Tbsp butter, softened
Peanut butter mousse:
1/2 cup heavy cream
1/4 cup chunky peanut butter
2 Tbsp brown sugar
Ganache:
1/2 cup heavy cream
4 oz. semi-sweet chocolate chips
Preparation
crust:
- Preheat oven to 350 degrees.
- Crush crackers and cut butter into crackers with pastry cutter or two knives, until mixture comes together. -Press into pie dish and bake for 10 minutes. Let cool.
Mousse:
- Meanwhile, soften peanut butter by mixing it with a few tablespoons of heavy cream.
- In a medium bowl, whip heavy cream and sugar until soft peaks form, then fold in the sugar and peanut butter mixture with a spatula.
- Spread mixture over cooled pie crust.
Ganache
- Heat the 1/2 cup heavy cream in the microwave for a minute or so, then add the chocolate chips and keep stirring until mixture is uniform.
- Slowly pour chocolate over pie and chill for at least a couple of hours.
