1oz Water

2oz Sugar

5 Egg Whites

8oz Heavy Cream, Whipped

Preparation

Melt The Chocolate & Butter Over A Hot-Water Bath Combine Egg Yolks, Water & 1oz Sugar & Whisk Over A Hot-Water bath To 145’F For 15sec Remove From Heat & Whip Until Cool Combine Egg Whites, 1oz Sugar & Whisk Over A Hot-Water Bath to 145’F Remove From Heat & Beat On High Speed Until Cool Using A Large Rubber Spatula, Fold The Egg Whites Into The Egg Yolks Fold The Chocolate Mixture Into The Egg Mixture Fold In The Whipped Cream
