Ingredients

chocolate, 70%, finely chopped, 500 grams

cake flour 700 grams

cocoa powder 120 grams

baking soda

20 grams

butter, softened 600 grams

sugar in the raw 480 gram

sugar 200 grams

vanilla 8 grams

fleur de Sel 12 grams

salt 1 pinch

Preparation

Chop the chocolate in the food processor and set aside. Cream butter. Add sugar and salt. Add vanilla. Add all remaining dry indredients, then add the chopped chocolate. I freeze the dough in six inch long rolls, then cut it into rounds. But you can just roll it into balls, and flatten it out with the bottom of a cup. Sprinkle with fleur de sel, if you like. Bake at 320 degrees for 6 to 8 minutes.
