Ingredients
4 ounces unsweetened chocolate
1 teaspoon vanilla extract
1/2 cup butter,softened
1-3/4 cups sugar,white
3 eggs
2 cups plus 2 tablespoons flour,all-purpose
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup confectioner’s sugar
Preparation
In the top of a double boiler,melt the chocolate over barley simmering water. Remove from the hot water and stir in the vanilla.Set aside In a large mixing bowl,cream the butter and sugar together,then beat until fluffy.Add the eggs and beat well.Add the chocolate mixture and beat until well blended. Combine the flour,baking powder and salt.Add to the batter,1/2 cup at a time,mixing after each addition only enough to blend the ingredients.Cover the bowl and chill the dough in the refrigerator for 2 hours. Preheat the oven to 350 F. Lightly grease the cookie sheets.Spread the confectioner’s sugar on a plate. Shape heaping teaspoonfuls of dough into balls.Roll the balls in the confectioner’s sugar then place them 1-1/2 inches apart on the prepared cookie sheets.
