Ingredients

1/2 cup butter

1 1/2 cups sugar

1 egg

1 cup cooked or canned pumpkin

1 tsp vanilla

2 1/2 cups all purpose flour

1 tsp baking powder

1 tsp baking soda

1/2 salt

1 tsp nutmeg

1 tsp cinnamon

1 cup chocolate chips

Preparation

  • Preheat oven to 350
  • Cream butter and sugar until light and fluffy
  • Beat in pumpkin, vanilla and egg
  • Mix and sift dry ingredients (flour, baking powder, baking soda, salt, nutmeg and cinnamon)
  • Add slowly to wet ingredients and mix well
  • Mix in chocolate chips
  • Drop by teaspoon onto well greased cookie sheets
  • Bake at 350 until lightly browned (~15 min)
  • Remove from cookie sheets while still warm and cool on racks
