Ingredients
Cupcakes:
1 egg
3/4 cup brown sugar
2 tsp vanilla
1 stick butter, melted and cooled
1 1/4 cups flour
1/2 cup oats
1 1/4 tsp baking soda
1/4 tsp salt
1/4 tsp cinnamon
2 tbsp milk
1/2 cup chocolate chips, tossed in flour
Frosting:
1 cup butter
2 cups powdered sugar
1/2 cup brown sugar
1/4 tsp cinnamon
1 tbsp vanilla
1 tbsp milk
1/3 cup mini chocolate chips
Preparation
Cupcakes: Preheat over to 350.
Whisk egg and sugar together until no lumps remain. Add in vanilla and butter. Ad in flour, oats, baking soda, salt, and cinnamon. Add milk. Fold in chocolate chips.
Bake 15-17 minutes.
Frosting: Beat butter until smooth and creamy. Add powdered sugar slowly. Add brown sugar and vanilla. Add milk if too thick, until desired consistency is reached. Fold in chocolate chips.
Frost.
