Ingredients
1 1/4 c flour
3/4 c cornmeal
1/4 c sugar
2 tsp baking powder
1/4 tsp salt
1/2 bittersweet or semisweet chocolate chips
1 c whole milk
1/4 c canola oil
2 large eggs
Preparation
Preheat oven to 375, spray 9x5x3 meal loaf pan with nonstick spray.Whisk flour, cornmeal, sugar, baking powder and salt in large bowl. Stir in chocolate chips. Whisk milk,canola oil and eggs in medium bowl. Add milk mixture to dry ingredients, stir just to blend. Transfer to prepared pan. Bake bread until tester inserted into center comes out clean, about 35 min. Cool 10 minutes. Invert cornbread onto rack. Cool slightly, serve warm or at room temperature.
