Ingredients
2 cups sugar
1 3/4 cups all purpose flour
3/4 c. cocoa powder (I started w/ Hershey’s but now use Valhrona)
1 1/2 tsp. baking powder
1 tsp. salt
2 eggs
1 cup milk
1/2 c. vegetable oil
2 tsp. vanilla
1 cup boiling water
Frosting:
6 tblsp. unsalted butter at room temperature
1/2 cup cocoa powder
2 2/3 c. confectioner’s sugar
1/3 c. milk
1 tsp. vanilla
Beat butter, add vanilla. Beat in sugar and cocoa powder. Add milk as needed. Depending on the humidity you may not need all of the milk.
Preparation
Preheat oven to 350 degrees. Grease and flour two 9" pans.
Combine all dry ingredients. Add milk, oil, eggs and vanilla (I usually put all of these ingredients in a measuring cup together and pour 1/3 at a time into the dry ingredients). Beat for approximately 2 minutes at medium speed. ADD BOILING HOT WATER TO BATTER. Beat for another 30 seconds and then pour into cake pans. bake for 30-40 minutes until cake tester comes out clean.
