Ingredients

1/4 cup butter

2 cup sugar

2 eggs + 1 egg white

1 cup stong coffee

1 cup buttermilk

1 tsp vanilla

1/4 oil

1 3/4 cup flour

3/4 cup cocoa

1 tsp baking power

2 tsp baking soda

pinch of salt

Preparation

  1. Cream together butter and sugar.

  2. Add the eggs, coffee, buttermilk, vanilla, and oil. Stir until mixed.

  3. Sift in the flour, cocoa, baking power, baking soda, and salt.

  4. Beat until mixed, then for an additional two minutes.

  5. Pour into a greased and floured cake plan. Bake in a 400 degree oven until tester comes out clean (approximately 40 minutes for cakes and 25 for cupcakes).
