Ingredients
Makes 1 loaf
9 x 13 pan - greased
1 ½ cups pitted Date, chopped
1 cup boiling Water
½ cup Vegetable Shortening
1 cup Sugar
1 tsp Vanilla Extract
1 Egg
½ cup sifted Flour
2 tbsp. Unsweetened Cocoa Powder
1 tsp. Baking Soda
¼ tsp. Salt
½ cup Walnuts, chopped
½ to 1 cup Semi Sweet Chocolate Morsels
Preparation
Combine dates & boiling water in bowl and set aside. Then cool to room temperature. In large bowl stir shortening to soften and gradually add sugar and creaming thoroughly. Add the vanilla & egg and beat well. In another bowl sift flour, cocoa powder, baking soda and salt. Add flour mixture to creamed mixture, alternating with the date mixture beating well after each addition. Pour into prepared loaf pan - sprinkle with nuts & chocolate morsels. Bake 25-30 minutes or until a knife comes out clean. Cool on rack or bake the day before. Add a dollop of fresh whipped cream - dust with chocolate or cocoa powder. Garnish with fresh strawberry & mint.
