Ingredients
1 tablespoon olive oil
1 medium onion, chopped
1 pound lean ground beef or ground bison
1 carrot, sliced
1 red pepper, chopped
3 cloves garlic, minced
1 tablespoon chili powder
1 tablespoon dried oregano
1 teaspoon cumin powder
Salt and pepper, to taste
1 cup gluten-free beer
1 15 oz. can crushed tomatoes
1 5 oz. can tomato paste
2 tablespoons unsweetened cocoa powder (I use Dagoba cocoa)
1 19 oz. can kidney beans, rinsed and drained
1 19 oz. can black beans, rinsed and drained
Preparation
Heat oil in a large skillet over medium heat. Cook onions until soft and translucent. Add meat and cook until browned throughout. Add carrot, red pepper and garlic. Cook 2 minutes. Add beer and simmer for 3 minutes. Add tomatoes, tomato paste, cocoa powder, kidney beans and black beans. Bring to a boil and then reduce heat. Simmer, covered, for 20 minutes, stirring occasionally.
