Ingredients
1-1/2c sugar
2 c flour (can be all unbleached white or 1 c rice flour or any GF mix & 1 c almond meal)
2 t baking soda
1/2 c cocoa powder (Hershey’s dark)
1 t salt
2 c applesauce, unsweetened
1 c melted unsalted butter or veg oil
2 t vanilla
Preparation
Pre-heat oven to 350F.
Sift together all dry ingredients. Mix together all wet ingredients. Combine wet and dry ingredients and mix well. Pour into well-greased bundt pan.
Bake for 45 minutes or until tester comes out dlean and edges of cake pull slightly away from sides of pan.
Cool in pan for 20 minutes and turn out. Cake can be enjoyed as is or chocolate chips placed on top while hot will melt into a glaze. Or cool completely and dust with powdered sugar.
