Ingredients
3/4 lb sushi tuna, diced small
1/3 cup chopped scallions
1/2 cup chipotle sauce (La Morena brand)
1/2 cup chopped cilantro
1/2 lime, juiced
Preparation
Combine scallions, chipotle sauce, cilantro and lime juice in a bowl and mix well. Add tuna and combine gently. Taste for additional lime juice or seasonings. Set bowl over an ice bath – the tuna is much tastier when served cold.
Serve individually on fancy potato or tortilla chips, or as a dip.
Spiciness can be moderated with a little mayonnaise.
