Ingredients

2-3 large sweet potatoes (peel if desired, but takes longer to cook)

1 1/2 cups whole milk or cream

1/3 cup dry white wine (fruity Spanish wines work well)

1/4 cup butter

1-3 cloves garlic to taste

1-2 teaspoons ground ginger

1 cup chipotle jack or chipotle gouda cheese, shredded

table salt to taste (optional)

Preparation

Pierce sweet potatoes all over with fork and cook in microwave about 25 minutes until soft, checking periodically. Scoop flesh into a saucepan, if necessary using masher or ricer to obtained desired consistency. Add milk, wine, and butter. Stir to incorporate over medium heat, along with garlic and ginger. Reduce heat and gradually stir in cheese until melted. Add salt as desired.
