Ingredients

1/2 cup crema mexicana (substitute creme fraiche or sour cream if not available)

1/2 cup best-quality mayonnaise

Adobo* to taste (start with about a teaspoon and go from there)

Kosher salt to taste

Freshly-ground pepper to taste

Preparation

Mix all ingredients. Serve with potato or corn chips or crudités.
