Ingredients
2 lbs bacon sliced 1/4 inch crosswise
1 lb butter
6 red bell pepper chopped
4 red onions chopped
6 carrots diced
2 small cans of chipotle peppers chopped
1 1/2 gallon chicken stock
4 1/2 gallon hot water
5 utility potatoes diced
1/2 cup chopped garlic
2 lb bag of frozen corn
4 quarts of heavy cream
Preparation
Cook the bacon. Add all the vegetabled, garlic, bell peppers, and chipotle peppers. Add water and chicken stock. Add heavy cream and bring to a boil. Add the corn and potatoes, and simmer on a low heat until potatoes are cooked. Add salt and pepper to taste
