Ingredients

2 boneless skinless chicken breasts, cut into 1 inch pieces

1 green bell pepper, chopped

2 tablespoons vegetable oil

1 (14.5 ounce) can Red Gold® Petite Diced Tomatoes with Chipotle

2 cups chicken broth

1 cup long grain white rice

Salt and black pepper to taste

1 cup shredded cheddar cheese

Preparation

In a large skillet heat oil and brown chicken and green bell pepper. Add remaining ingredients, except cheese, and bring to a boil. Cover and cook for 17 to 20 minutes or until all liquid is absorbed. Sprinkle with cheese and cook an additional 5 minutes to melt cheese.
