Ingredients
4 boneless chicken breasts
1/4 lb sliced mushrooms
2 limes, juices
1 tbsp honey
2 cloves garlic, minced
1 tsp salt
1 tbsp chipotle peppers in adobo sauce
2 tbsp cornstarch
2 tbsp olive oil
Preparation
Place chicken, chipotle pepper, honey, garlic, and lime juice in a ziploc baggie and shake.
Brown chicken in a large, oven-proof skillet with the olive oil.
Add cornstarch to marinade mixture, mix well and add to the skillet along with the sliced mushrooms.
Place skillet in 350-degree oven for 20 minutes.
Serve with Garlic Mashed Potatoes or Rice.
