Ingredients
6 eggs
1/3 cup milk
2/3 cup cottage cheese
1/4 teaspoon salt
1/4 teaspoon pepper
1 chipotle pepper in adobo sauce, minced (from 6 ounce can)
1 teaspoon olive oil
2 avocados - peeled, pitted, and mashed
4 (10 inch) flour tortillas, warmed
1/2 cup shredded Cheddar cheese
Preparation
In a blender, whirl together the eggs, milk, and cottage cheese. Season with salt, pepper and minced chipotles. Heat oil in skillet over medium heat, add egg mixture. Cook and stir until almost firm. Season mashed avocados with salt. Warm tortillas in microwave at medium heat, just until warm. Spread equal amounts of the avocado mixture on one side of each warmed tortilla. Layer with equal amounts cheese and scrambled eggs. Roll into burritos and serve with salsa. Makes 4 servings
