Ingredients

Dressing:

2-3 tbsp soy sauce

3 tbsp rice vinegar

2 tbsp olive oil

1 tsp dark sesame oil

Salad:

Chinese noodles

Cabbage

Baby corn cobs (reserve liquid)

Water chestnuts

Scallions

Fresh cilantro

Cashews

Preparation

Cook noodles according to pacakage directions, drain and chill.

Combine dressing ingredients. Chop salad veggies, mix with dressing and cashews. Add noodles and a bit of the reserved corn liquid if too dry.

Refrigerate, best served chilled.
