Ingredients

1 1/2 cups long grain rice

2 lean pork tenderloins

Cooking Oil

2 medium onions

1 green pepper

3 eggs

4 tablespoons soya sauce

salt and pepper

Preparation

Cook rice until just tender. Drain and place in warm oven. Cut pork in thin strips and brown quickly in hot oil. Cover and cook until tender. Remove to bowl. Coarsely cut onions and pepper and cook in skillet until just tender. Remove to bowl with pork.

Pour eggs into skillet. Add oil if necessary. Cook stirring constantly, add to pork, Toss rice in skillet until hot. Add soya sauce to rice. Combine all ingredients in serving bowl.
