Ingredients

2 whole chicken breast or 12 chicken tenders, cooked and shredded

4 scallions, sliced on the diagonal

1 head romaine, sliced for salad

1/4 package rice sticks, fried in about an inch of hot vegetable oil, drained on paper towels

2 tablespoons sesame seeds

1/4 cup almonds, slivered and toasted

Dressing

4 tablespoons sugar

4 tablespoons seasoned rice vinegar

1 teaspoon salt

1 teaspoon MSG ( I omit this and don’t miss it)

1/3 to 1/2 cup vegetable or corn oil

Preparation

Prepare all ingredients separately. Keep chicken, lettuce, scallions cool until ready to use.

Prepare dressing by combining 1st four ingredients. Heat until just boiling to dissolve sugar. Cool, mix in oil.

Toss all ingredients, add dressing, toss again and serve at once.
