Ingredients

3 large cloves garlic, peeled

2 shallots, peeled

1 bay leaf (fresh, or if dried remove stem and centre rib)

2 T red wine vinegar

1 T lemon juice

1 t fresh thyme

1/2 t dried red pepper flakes

1/2 t salt

several grindings black pepper

pinch sugar

2 C flat leaf parsley

1/2 cup olive oil

Preparation

  1. combine first 10 ingredients in food processor and puree to paste. Scrape into bowl.
  2. finely chop parsley in food processor. add garlic to mixture.
  3. stir in olive oil.
  4. Chill at least one hour (or overnight).
