Ingredients
3 large cloves garlic, peeled
2 shallots, peeled
1 bay leaf (fresh, or if dried remove stem and centre rib)
2 T red wine vinegar
1 T lemon juice
1 t fresh thyme
1/2 t dried red pepper flakes
1/2 t salt
several grindings black pepper
pinch sugar
2 C flat leaf parsley
1/2 cup olive oil
Preparation
- combine first 10 ingredients in food processor and puree to paste. Scrape into bowl.
- finely chop parsley in food processor. add garlic to mixture.
- stir in olive oil.
- Chill at least one hour (or overnight).
