Ingredients

1 packed cup flat-leaf parsley, finely chopped

3-4 cloves garlic, minced

1 jalapeno, diced

2 tsp. dried oregano (or 2 tbs. if you have fresh)

1 tsp. red pepper flakes

3 tbs. red wine vinegar

1/2 cup olive oil

Preparation

  1. In a medium bowl, mix the parsley and next five ingredients.
  2. Pour olive oil in slowly, whisking with a fork until well blended.
  3. Chill for 30 minutes before serving.
