Ingredients

1 27oz. can Ortega whole chilies

6C. grated jack cheese

4 eggs

1 C.milk

salt & pepper to taste

2 cans ortega green chile salsa

Preparation

Grease rectangular pyrex dish. ( 9 x 13) Slit chilies lengthwise, Rinse, remove seeds and pat dry.

Fill chilies with cheese (save about 1C or more), roll and place seam side down in greased pan.

Beat eggs, add milk, add salt(don’t add much salt, as cheese is very salty & pepper. Pour over chilies and sprinkle with remaining cheese. Bake at 375 35-40 minutes till golden. Heat salsa and spoon over top.
