Ingredients

500g of good quality beef mince

1 large onion

1 stick of celery

2 garlic cloves

1 red chilli deseeded

2 tsp cumin seed

2 tsp sweet paprika

2 tbsp chopped fresh corriander

1 stick of cinnamon

(sprinkling of dried chilli wherever nescesary)

1 tin of kidney beans

400g chopped tomato

Tomato puree

half cup of beef stock

Salt and pepper

Rice and corn mixed together and tortillas for wraps

Preparation

Sweat the onions, celery, garlic and chilli. Once browned add the dried spice to release aroma and then add the seasoned minced meat. Mix and mash well so that it all blends together and season with salt and pepper only once the meat has cooked.

Sprinkle the beans with sweet paprika and dried corriander and add to the meat. Pour in the half cup of beef stock and leave to simmer for 15 minutes before adding the tomatoes and tomato puree.

Once the tomatoes are added, leave to simmer for 2 hours on a very low heat and if needed add more cumin, salt or dried spice.

Once ready, sprinkle with freshly chopped corriander and rice with corn and for those that love it HOT..jalapeños!
