Ingredients

1/2 kilo chicken thighs

soy sauce seasoned with calamansi, or toyomansi, available at any Filipino grocery

1/2 cup honey

3 tbsps garlic, minced

1/2 tsp salt

siling labuyo, or chilli, chopped

olive oil for sauteeing

Preparation

Marinate chopped chicken with toyomansi, honey, miced garlic, salt, and fresh chopped chilli pepper to your taste. Let stand at least 30 minutes, basting all chicken parts every ten minutes.

In frying pan, saute olive oil and garlic. When hot, sear chicken until all parts are brown. Add remaining marinade and cook on high heat for 25 more minutes, taking care not to dry the sauce. Chicken should be slightly glazed when done. Serve hot with fresh brewed iced green tea and red rice.
