Ingredients

2 large ripe avocados

3 cups chicken broth (homemade if you’re up to it)

2 T fresh lemon juice

1/2 tsp chile powder

2 T finely chopped chives

1 tsp salt

For garnish:

sour cream

crushed tortilla chips

fresh salsa

Preparation

  1. Peel avocado and cut into pieces and puree in food process.

  2. Add the chicken stock, lemon juice, chile powder, chives and salt, and process until smooth. Taste for seasonings.

  3. Chill for 4 hours.

  4. Serve with garnishes on side. Use fresh salsa from the store or the Tomato Cucmber Salsa recipe I’ve included in my online cookbook.
