Ingredients

1 pound ground beef or ground turkey

2 teaspoons olive oil

1 medium onion diced

1 bell pepper diced

2 carrots pealed and finely diced(I like mine chopped fine in food processor)

2 cloves garlic finely chopped

1 (12-ounce) bottle of beer, preferably a medium or dark ale

1 can pinto beans, rinsed and drained

1 can kidney beans, rinsed and drained

28 oz can of crushed tomato

1 table spoon tomato paste

15 tortilla chips

1 to 2 chipotle peppers canned in adobo sauce, chopped

2 tablespoon adobo sauce (from the chipotle peppers in adobo)

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon oregano

2 cups of beef stock

salt and pepper to taste

Preparation

Brown beef in a large skillet over medium high heat, drain fat and set a side.

In a large heavy pot over medium heat, heat olive oil and saute onion, bell pepper and carrots until tender about 10 minutes. Add garlic, cumin and oregano and saute for another 1 to 2 minutes. Add beef, beer, crushed tomato, beef tock, tomato paste, tortilla chips, chipotle peppers, adobo sauce and chili powder and simmer over medium low heat for at least 1 hour. Add pinto beans and kidney beans and simmer for another 30 minutes. Salt and pepper to taste.
