Ingredients
5 lb ground beef
salt and pepper to taste
10 cloves garlic
2 yellow onions chopped
1/2 cup chili powder
1 tbsp cumin
2-3 tsp cayenne
2 cans (28oz, 875g) tomatoes diced
1/3 cup cornmeal
2 cups beef stock
2 cans (14oz/440g) kidney beans
sour cream or red onion or grated cheese garnish
Preparation
brown beef in insert 10 minutes season with salt and pepper, drain fat, removes to paper towels, set aside
reduce heat to medium, add garlic and onions, stir fry 5 minutes
add chili powder, cumin, and cayenne cook 2 minutes
add tomatoes and cornmeal stir to combine, add beef and stock mix well
put insert into slow cooker, cook 3 hours on high or 6 hours on low,
add kidney bean towards end of cooking cycle
