Ingredients

1 Tbs olive oil

1 pound lean ground beef

2 1/2 tsp chili powder, divided

1 tsp ground cumin

1/4 small onion (red or sweet vadalia), thinly sliced

2 garlic cloves

1 (28 oz) can diced tomatoes

1 (15 oz) can chili beans, rinsed & drained (Bush’s)

salt & fresh ground pepper

scallions, chopped

reduced fat sour cream

low fat cheddar cheese

Preparation

Heat oil in a large heavy bottom saucepan over med-high. Add beef, 1 tsp chili powder to the same sauce pan; cook over medium, stirring occasionally, until softened ~3 minutes. Add tomatoes with juice and beans; cover & simmer 10 minutes, stirring occasionally.

Uncover, add cooked beef, and cook an additional 5 minutes, until liquid thickens slightly. Season to taste with salt & pepper and serve hot with cheese, chopped scallions & sour cream.
