Ingredients

2 T Mexican seasoning

3 lbs cooked pot roast, shredded

2 T oil

2 lg onions, chopped

5 medium peppers, variety of yellow, green, red, banana wax and dk green chili pepper

3 T chili powder

1 t. minced, seeded, canned chipotle chiles in adobo sauce.

10-12 medium homegrown tomatoes, chopped

1 can pinto beans

1 bottle good beer.

Preparation

Toast mexican seasoning until smoking in a pan. let cool. In a dutch oven, saute onion, peppers in the oil about 10 minutes until soft. Add shredded beef, chili powder, chiles, chopped tomatoes beans and beer. Simmer 20 minutes, taste for salt and pepper.

you can freeze portions for later then re-heat in the crockpot. make sure your portion size fits neatly into the crockpot when frozen.
