Ingredients

1/3 cup olive oil

1 large onion coursely chopped

About 2 pounds lean ground beef

2 or 3 hot Italian sausages

2 small tins tomato paste

4 large garlic cloves (go easy, you aren’t cooking Italian)

2 to 3 Tbs cumin

3 Tbs chili powder

2 Tbs mustard

1 Tbs dried basil

1 Tbs dried oregano

2 large cans diced tomatoes DRAINED

1/4 red wine

1 Tbs lemon juice

1/4 cup fresh dill

1/4 cup Italian parsley

Preparation

Heat olive oild in a large stew pot. Add onions and cook over low heat until tender and translucent, about 10 minutes.

Crumble the sausage meant and ground beef into the pot and cook over medium heat , stirring often, until meats are well browned and cooked through. Spoon out inordinant excess fat.

Over low heat stir in tomato paste, garlic, cumin, chili powder, mustard, salt, basil and oregano.

Add the drained tomatoes, wine, lemon juice, dill, parsley and kidney beans. Stir well and simmer, uncovered for another 15 minutes.

Taste and correct seasoning. Simmer for another 5 minutes and serve.
