Ingredients

1 lb. lean ground beef

1 medium onion, diced

1 clove garlic, minced

4 14.5 oz. cans diced tomatoes

4 14.5 oz. cans red kidney beans

1/2 cup fresh or canned sweet corn

1/2 cup mild salsa

1/4 cup ketchup (more for sweeter chili)

Serve with a dollop of sour cream and a sprinkle of cheddar cheese.

Preparation

Saute the onion in olive oil until translucent. Add ground beef and brown together with garlic and chili powder. Add beans, tomatoes, corn, salsa, and ketchup and simmer lightly until beans are tender, about 1.5 hours. Cool and refrigerate overnight. Reheat and serve.
