Ingredients

2 cups Couscous

4 cups Boiling water

1 tsp Olive oil

14 ounces Chicken, diced

1 Yellow pepper, seeded, sliced

2 Large zucchini, sliced thickly

1 Green chili, thinly sliced

1 Large tomato, diced

Preparation

  • Cook couscous as per directions
  • Heat oil in frying pan, stir-fry chicken, then reduce heat
  • Stir in pepper, zucchini and chili - Cook 10 minutes
  • Stir in tomato, then couscous
  • Add salt and pepper, stir until hot
