Ingredients

6 garlic cloves peeled

1 green serrano chile

1 jalapeno chile

1 1/2 teaspoons sea salt

6 med ripe tomatoes, peeled, seeded and chopped

1 cup finely chopped sweet vidalia onion

1 tbs minced fresh cilantro

1/2 tsp dried oregano

1/4-1/2 cup vegetable oil

2 tbs red wine vinegar

Preparation

In a mortar, crush the garlic, chile peppers and salt and make a paste.

Transfer mix to serving bowl

Add remaining ingredients and stir
