Ingredients
1 32-oz. can whole green chiles
8 oz. grated Monterey Jack cheese
8 oz. grated cheddar cheese
3 12-oz. cans evaporated milk
12 eggs
12 Tbsp. flour
1/2 cup of salsa (try our Mamasita’s Salsa or Black Bean & Corn Salsa)
Preparation
Preheat oven to 350-degrees F. Grease a 9-inch x 12-inch baking dish. Line the bottom of dish with whole chiles. Mix cheeses together. Sprinkle cheeses over chiles. Beat eggs and flour, mixing well. Now add milk to egg mixture, again mixing well. Spoon salsa over top of mixture. Bake for approximately 1 hour, or until firm.
