Ingredients
12-14 Guajillo Chiles (Or New Mexican Chiles)
Water (To Rehydrate Chiles)
8 Cloves Garlic
1 Medium Onion
1 Tsp Mexican Oregano
1 Tsp Black Pepper
1 Tsp Ground Cumin
2 Tsp Of Your Favorite Grill Seasoning
1 Bunch Chopped Cilantro
1/4 Cup Olive Oil
6-8 oz Beer
Juice Of 1 Lime
Preparation
Remove & discard stems & seeds from chiles. Fill a pot with enough water to cover chiles (Approx 4 Cups) and bring to a boil. Remove from heat & add chiles. Cover & let set for 30 mins. Strain chiles, discarding liquid.
Peel & chop onion & garlic.
Combine all ingredients in blender or large food processor. Blend until smooth. Push marinade through a mesh strainer & discard solids. Don’t skip this step because the chile skins will be tough & bitter!
Cover meat with marinade, setting aside a small amount to baste with. Marinate 12-24 hours for best flavor, the longer the better. Enjoy!
