Ingredients
Beef
8 dried guajillo chiles, seeded
4 garlic cloves
2 tsp dried oregano
6 Tb canola oil
s&p
1 onion, fine dice
1/2 C light brown sugar
1/4 C vinegar
Preparation
Cover chiles w/ water and simmer for 5 mins until softened. Transfer chiles & liquid to blender. Add garlic, oregano and 4T oil and blend until smooth. Season t.t.
Season beef w/ s&p and rub w/ half of chile puree. Marinate in plastic bag overnight.
Make glaze. Saute onion until soft. Add remaining chile puree and cook for 2 mins. Add brown sugar & vinegar and simmer 3 mins. Season.
Grill steaks and brush w/ glaze in last 2 mins. Rest, slice 1/2 " thick and serve w/ remaining glaze.
