Ingredients

6 corn tortillas

3 Tbsp oil

1/2 cup onion, diced

1/4 cup chopped canned California green chiles

1/2 tsp salt

6 eggs

1 cup jack cheese or Cheddar cheese, shredded

Red Chile sauce to cover(like a enchillada sauce)

Preparation

Cut the tortillas into strips about 1/2 inch wide. Fry over medium heat in hot oil, stirring until crisp (Sometimes, I until package tortilla chips, if in a hurry). Add the diced onion, chopped chiles, salt, and eggs, and mix well. Cook, stirring, until eggs are partially set. Sprinkle with shredded cheese and continue cooking, stirring until eggs are cooked as you like them. Top each serving with Red Chile sauce.
