Ingredients
6 corn tortilla, cut in 1’ strips.
3 tablespoons olive oil
1/2 cup red onions, diced
1/4 cup green chile, chopped
1/2 teaspoon salt
6 eggs
1 cup pepper jack cheese, shredded
1 small can El Pato red chile sauce
Preparation
Cut tortillas into strips, day old ones work best. Fry over med. heat in oil, stirring until crisp.
Add the diced onion, chopped chiles, salt and eggs and mix well. Cook, stirring until eggs are partially set. sprinkle with shredded cheese and continue cooking, stirring until eggs are cooked as you like. top each serving with red chile sauce.
