Ingredients

1 can chick peas (no salt added)

3 tablespoons extra virgin olive oil

1 handful roughly chopped parsley

2 sliced scallions (or substitute alternative type of onion)

juice of 1/2 lemon

1/4 teaspoon of kosher salt

freshly ground black pepper

Preparation

  1. Toss a drained and rinsed can of no-salt-added chickpeas with 3 Tbs. of extra-virgin olive oil, a handful of roughly chopped parsley, 2 sliced scallions, and the juice of 1/2 lemon.

  2. Season with 1/4 tsp. of kosher salt and plenty of freshly ground black pepper.
