Ingredients

1/4 cup olive oil

2 T lemon juice

2 cloves garlic mashed

1/2 t crushed red pepper

s&p

2 cans low sodium chick peas, rinsed (about 3 cups)

1/4 cup parsley, finely chopped

1 shallot, finely diced

1 red pepper, finely diced

15 green or kalamata olives pitted & halved

8 oz. snow peas, blanched and cut on the diagonal in slivers

Preparation

1.Whisk together the olive oil, lemon juice, garlic, red pepper and s&p.

  1. Toss the chick peas with the dressing, parsley, shallot, red pepper and olives.

  2. Allow flavors to blend overnight in the fridge. Before serving add the snow pea slivers and toss.
