Ingredients
1/4 cup olive oil
2 T lemon juice
2 cloves garlic mashed
1/2 t crushed red pepper
s&p
2 cans low sodium chick peas, rinsed (about 3 cups)
1/4 cup parsley, finely chopped
1 shallot, finely diced
1 red pepper, finely diced
15 green or kalamata olives pitted & halved
8 oz. snow peas, blanched and cut on the diagonal in slivers
Preparation
1.Whisk together the olive oil, lemon juice, garlic, red pepper and s&p.
Toss the chick peas with the dressing, parsley, shallot, red pepper and olives.
Allow flavors to blend overnight in the fridge. Before serving add the snow pea slivers and toss.
