Ingredients

1 can (15 ounce) chickpeas (garbanzo beans), drained

1 tablespoon peeled, chopped fresh ginger

2 tablespoons lemon juice

1 medium onion, finely chopped

1 small cucumber, sliced

2 green chile peppers, such serrano, deseeded & finely chopped

1 medium ripe tomato, finely chopped

1 teaspoon dry oregano, crushed

2 teaspoons balsamic vinegar

salt and freshly ground pepper

2 tablespoons finely chopped fresh coriander

Preparation

Mix together all the ingredients in a large bowl except for the coriander. Chill and serve the salad garnished with coriander.
